Rotolo
Fresh hand rolled pasta sheets are filled with mushrooms fried in butter and glazed with sherry, and a cooked spinach, cottage cheese and feta filling. The filled pasta is rolled into a cylinder and then poached briefly, and sliced before being baked on a layer of slow cooked red wine and tomato sauce.
